Gender Options: Expand list or make removable

Male, female, and UNKNOWN are alienating. "Other" would also be alienating. We would choose to leave the field blank for all persons, except then "UNKNOWN" presents in the dashboards and appears to be a forgotten field or other mistake in the account when viewing authorized pickups, account holders, children, etc.
